Melted Butter Cookies

Ingredients

  • 3 cups (375 g) all-purpose flour
  • 1 1/3 teaspoons baking soda
  • 2 teaspoons cornstarch
  • 1/2 teaspoon salt
  • 1 cup (2 sticks) butter, melted & cooled 5 minutes
  • 1 cup (200 g) packed light or dark brown sugar
  • 2/3 cup (133 g) granulated sugar
  • 2 large eggs, at room temperature
  • 1 egg yolk, at room temperature
  • 1 Tablespoon pure vanilla extract
  • 2 cups semi-sweet chocolate chips or chunks

Directions

  • Combine dry ingredients
    • flour
    • baking soda
    • cornstarch
    • salt
  • whisk together until smooth and lump-free
    • melted butter
    • brown sugar
    • granulated sugar
    • eggs and egg yolk
    • vanilla extract
  • Pour the wet ingredients into the dry ingredients
  • Mix with a large spoon or spatula until just combined
  • Add the chocolate chips.
  • Cover the dough tightly and refrigerate for at least 2 hours
  • Preheat oven to 325°F (163°C)
  • Portion Dough
  • Roll dough into balls and shape taller rather than wide (cylinder shape)
  • Place cookies 3 inches apart on baking sheets
  • Bake for 13–14 minutes (until edges are lightly browned)
  • Cool on the baking sheet for 10 minutes
