Melted Butter Cookies
Ingredients
- 3 cups (375 g) all-purpose flour
- 1 1/3 teaspoons baking soda
- 2 teaspoons cornstarch
- 1/2 teaspoon salt
- 1 cup (2 sticks) butter, melted & cooled 5 minutes
- 1 cup (200 g) packed light or dark brown sugar
- 2/3 cup (133 g) granulated sugar
- 2 large eggs, at room temperature
- 1 egg yolk, at room temperature
- 1 Tablespoon pure vanilla extract
- 2 cups semi-sweet chocolate chips or chunks
Directions
- Combine dry ingredients
- flour
- baking soda
- cornstarch
- salt
- whisk together until smooth and lump-free
- melted butter
- brown sugar
- granulated sugar
- eggs and egg yolk
- vanilla extract
- Pour the wet ingredients into the dry ingredients
- Mix with a large spoon or spatula until just combined
- Add the chocolate chips.
- Cover the dough tightly and refrigerate for at least 2 hours
- Preheat oven to 325°F (163°C)
- Portion Dough
- Roll dough into balls and shape taller rather than wide (cylinder shape)
- Place cookies 3 inches apart on baking sheets
- Bake for 13–14 minutes (until edges are lightly browned)
- Cool on the baking sheet for 10 minutes
