Chile Colorado / Carne Adovada

Ingredients

  • 12 New Mexican Chili pods
  • 3 lbs of cubed beef (or pork)
  • 1 Tablespoon salt
  • 1 Tablespoon pepper
  • 4 cups of beef broth
  • 1/2 Onion
  • 4 cloves garlic
  • 1 Tablespoon oregano
  • 2 teaspoon cumin
  • 2 bay leaves

Directions

  • Toss cubed beef with salt + pepper
  • Brown beef and set aside
  • To the pot add the chilies and toast until fragrant (about 1 minute)
  • Add beef broth and onion to the pot.
  • Bring to a boil, then turn off heat and cover
  • Rest for ~15 minutes to soften everything
  • Add to a blender & blend until smooth
    • soaked chilies
    • garlic
    • oregano
    • cumin
  • Return meat and chile sauce to a pot, add bay leaves and simmer for 2 hours

Notes

  • Replace the beef with pork to make Carne Adovada
  • You can also use Guajillo chilies instead
