Chile Colorado / Carne Adovada
Ingredients
- 12 New Mexican Chili pods
- 3 lbs of cubed beef (or pork)
- 1 Tablespoon salt
- 1 Tablespoon pepper
- 4 cups of beef broth
- 1/2 Onion
- 4 cloves garlic
- 1 Tablespoon oregano
- 2 teaspoon cumin
- 2 bay leaves
Directions
- Toss cubed beef with salt + pepper
- Brown beef and set aside
- To the pot add the chilies and toast until fragrant (about 1 minute)
- Add beef broth and onion to the pot.
- Bring to a boil, then turn off heat and cover
- Rest for ~15 minutes to soften everything
- Add to a blender & blend until smooth

- Return meat and chile sauce to a pot, add bay leaves and simmer for 2 hours
Notes
- Replace the beef with pork to make Carne Adovada
- You can also use Guajillo chilies instead
