Chocolate Swirl Oatmeal Marble Cake in a Pan

Ingredients

  • 2 eggs
  • 1 tablespoon sweetener
  • 1 teaspoon vanilla extract
  • 2/3 cup milk
  • 80 grams oat flour
  • 80 grams almond flour
  • 1 teaspoon baking powder
  • 1.5 Tablespoons of unsweetened cocoa powder
  • 2 tablespoons olive oil.
  • 2 tablespoons milk.

Notes

  • Mix Wet ingredients
    • Eggs
    • Sweetener
    • Vanilla Extract
    • Milk
  • Mix Dry ingredients
    • oat flour
    • almond flour
    • baking powder
  • Combine wet & dry ingredients
  • Divide mixture into 2 parts
  • Add to 1 of the separated dough sections
    • cocoa powder
    • 2 tablespoons olive oil.
    • 2 tablespoons milk.
  • Grease a frying pan with coconut or oil of your choice (I used a 10” skillet which makes a thin cake).
  • Place parchment paper in the bottom of the pan
  • Alternately add 1/4 cup of dough at a time
  • Add a few grams of dark chocolate
  • Add some lightly toasted walnuts
  • Cover with a lid
  • Cook over low heat for 10-12 minutes or until a toothpick comes out clean
  • Top with more chocolate chips
  • Cover with a lid and cook for another 5 minutes
