Tuscan White Bean Soup

Ingredients

  • 1 cup Mirepoix
    • 1/2 cup onion
    • 1/4 cup carrot
    • 1/4 cup celery
  • 2-3 diced Carrots
  • 1 cube (or equivalent powdered) Vegetarian bouillon
  • 6 cups Water
  • 6 cloves Garlic
  • 1 14 oz cans White Beans (canned is easiest)
  • Browned Italian Sausage chunky
  • Kale to taste
  • Zucchini to taste
  • 1/3 cup Madeira wine important!
  • Salt and Pepper to taste
  • Grated Parmesan to taste

Directions

  • Sauté mirepoix in olive oil.
  • Stir in extra carrots.
  • Sauté until slightly tender.
  • Add bouillon and water.
  • Bring to a boil.
  • Add sausage chunks then simmer for 1-2 hours on medium low.
  • When ready to serve, add kale and zucchini continue simmer for about 5 minutes.
