Mom's Posole
Ingredients
- 1 bag dried posole
- 1-2 pounds cubed pork
- 6 cloves garlic (when you warm it up add some more fresh garlic especially if you froze it)
- 1 Diced Onion
- 2 tsp saffron
- 1 tbsp Oregano
- 1-2 tbsp bouillon powder chicken or vegetable
- Olive oil
- 2-4 Chopped green chilies
- 2 tbsp green chili powder
- 1 tsp Red chili powder
Directions
- Pressure cook posole 1.5 hours in 3 cups water. You can pressure cook in 45 minute increments to check for blooming. ( see note 1 )
- Sauté onions, add garlic set aside.
- Brown pork cubes but don’t overcook as it will dry out the meat.
- Add onions, garlic and pork to posole.
- Add seasonings.
- Add extra olive oil to the pot.
- Pressure cook all ingredients for another 30-45 minutes.
- Simmer for 1 hour
Notes
- When posole starts to bloom you are finished with this process.
- Sometimes I use turmeric which tastes really good in it.
