Tuscan White Bean Soup
Ingredients
- 1 cup Mirepoix
- 1/2 cup onion
- 1/4 cup carrot
- 1/4 cup celery
- 2-3 diced Carrots
- 1 cube (or equivalent powdered) Vegetarian bouillon
- 6 cups Water
- 6 cloves Garlic
- 1 14 oz cans White Beans (canned is easiest)
- Browned Italian Sausage chunky
- Kale to taste
- Zucchini to taste
- 1/3 cup Madeira wine important!
- Salt and Pepper to taste
- Grated Parmesan to taste
Directions
- Sauté mirepoix in olive oil.
- Stir in extra carrots.
- Sauté until slightly tender.
- Add bouillon and water.
- Bring to a boil.
- Add sausage chunks then simmer for 1-2 hours on medium low.
- When ready to serve, add kale and zucchini continue simmer for about 5 minutes.
