Almond Coconut Granola
Ingredients
- 4 cups old fashioned oats
- 1 cup whole almonds
- ½ teaspoon sea salt
- ¼ cup brown sugar
- ⅓ cup honey
- 3 tablespoons coconut oil
- ½ teaspoon pure vanilla extract
- ¼ teaspoon almond extract
Directions
- Preheat oven to 350°F.
- Chop or pulse almonds in a food processor until coarsely chopped.
- Combine (multiple ingredients format)

- Sea salt
- Brown sugar
- In a microwave-safe measuring cup, combine (multiple ingredients format)
- Honey
- Coconut oil
- Microwave for 40–50 seconds, then stir until coconut oil is dissolved.
- Add (multiple ingredients format)
- Vanilla extract
- Almond extract
- Pour the honey mixture over the oat mixture and stir until evenly coated.
- Spread mixture evenly onto a parchment-lined baking sheet with sides.
- Bake for 5 minutes.
- Stir or flip the oats, then spread back into an even layer.
- Bake for another 5 minutes, until edges are golden.
- Remove from oven and let cool completely.
- Break into clusters once cooled.
- Store in an airtight container.
