Double Chocolate Chip Oatmeal Cookies

Ingredients

  • 1 cup (2 sticks) butter
  • 1 cup brown sugar (or 1/2 cup monk fruit golden)
  • 1/2 cup sugar (or 3/4 cup date sugar)
  • 1 teaspoon vanilla paste
  • 2 large eggs
  • 3/4 cup GF flour
  • 1/2 cup almond flour
  • 1/2 cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup rolled oats
  • 1 cup oat flour (or substitute with more oats, or 1/4–1/2 cup extra GF + almond flour plus oats as needed)
  • 1 1/2 cups semisweet chocolate chips

Directions

  • Preheat oven to 350°F (175°C)
  • Cream butter and sugars until fluffy (1–2 minutes)
    • Butter

  • Add eggs and vanilla, whip on high for about 1 minute

    • Vanilla paste
  • Sift in dry ingredients and mix until combined
    • GF flour
    • Almond flour
    • Cocoa powder
    • Baking powder
    • Baking soda
    • Salt
    • Oat flour
    • Rolled oats
  • Fold in chocolate chips
    • Semisweet chocolate chips
  • Scoop dough onto baking sheet about 2 inches apart
  • Bake for 10–14 minutes

Notes

  • Adjust oat flour and oats as needed to reach a good cookie dough consistency
  • Cookies will continue to set as they cool
