Double Chocolate Chip Oatmeal Cookies
Ingredients
- 1 cup (2 sticks) butter
- 1 cup brown sugar (or 1/2 cup monk fruit golden)
- 1/2 cup sugar (or 3/4 cup date sugar)
- 1 teaspoon vanilla paste
- 2 large eggs
- 3/4 cup GF flour
- 1/2 cup almond flour
- 1/2 cup cocoa powder
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup rolled oats
- 1 cup oat flour (or substitute with more oats, or 1/4–1/2 cup extra GF + almond flour plus oats as needed)
- 1 1/2 cups semisweet chocolate chips
Directions
- Preheat oven to 350°F (175°C)
- Cream butter and sugars until fluffy (1–2 minutes)

- Add eggs and vanilla, whip on high for about 1 minute

- Sift in dry ingredients and mix until combined
- GF flour
- Almond flour
- Cocoa powder
- Baking powder

- Oat flour
- Rolled oats
- Fold in chocolate chips
- Semisweet chocolate chips
- Scoop dough onto baking sheet about 2 inches apart
- Bake for 10–14 minutes
Notes
- Adjust oat flour and oats as needed to reach a good cookie dough consistency
- Cookies will continue to set as they cool
