Chile Colorado

Ingredients

  • 1/2 Onion
  • 12 Chili Pods
  • 3 Cloves garlic
  • 1 4 cup container of beef broth
  • 12 Dried Red Chilis (New Mexican)
  • 3lb Beef chunks
  • 2 bay leafs

Directions

  • De-seed chilis
  • Add to a pot
    • Onion
    • Garlic
    • Chiles
    • Broth
  • Bring broth to a boil
  • Let simmer covered for 10 minutes
  • Stir & Simmer for 10 more minutes
  • Remove from heat and transfer contents to a blender plus
    • Oregano
    • Cumin
  • Blend until smooth
  • Brown beef
  • Add sauce to beef + 2 bay leafs
  • Simmer until sauce thickens

Notes

  1. You can use chicken broth if in a pinch
  2. Replace broth with 4 cups of water + appropriate amount of bullion
